This panel brings together some of the most inspiring voices in the industry to celebrate, empower, and uplift women in hospitality. The discussion will explore the experiences, challenges, and successes of women shaping the future of bars and spirits. Expect a thought-provoking conversation on leadership, mentorship, and the evolving role of women in hospitality, with insights from Guoy (Cosmo / Jigger & Pony group), Gaby (Dun Fulano Tequila), Gina (Hanky Panky), Ines (Cochichina), Aline (Florería Atlántico), Sarah (Teresa), Eve, amd Sarah (Maybe Sammy).

Margarita Sader
Margarita Sader is a Venezuelan entrepreneur and designer, best known for co-founding Paradiso, a renowned cocktail bar in Barcelona, Spain in late 2015, a speakeasy-style bar hidden behind a pastrami shop in Barcelona's El Born district. Under their leadership, Paradiso achieved international acclaim, being named No.1 in The World's 50 Best Bars 2022—the first time a bar outside New York or London received this honor. Beyond Paradiso, Margarita founded MS Bar Trends, a brand specializing in the latest hospitality trends. Her role as creative director involves designing uniforms, conceptualizing menus, and planning events, reflecting her passion for fashion and hospitality.

Sarah Proietti
Originally from Italy, Sarah has spent over 15 years immersed in hospitality, driven by a deep passion for cocktails, culture, and unforgettable experiences. She is Venue Manager & Head of People and Culture at Maybe Sammy. Her journey began in 2009 while studying business management, but she quickly realized her true calling wasn’t behind a desk—it was behind the bar.Following her instincts, she moved to Australia and worked her way up to lead Maybe Sammy, one of the world’s most celebrated cocktail bars. Beyond crafting exceptional drinks, Sarah thrives on building strong, inclusive, and disciplined teams, where professionalism and fun go hand in hand. Sarah was elected Australian Bartender of the Year 2022.

Guoyi Gan
Together with her husband and Co-Founder Indra Kantono, Guoyi helms Jigger & Pony Group, a Singapore-based hospitality company known for delivering convivial hospitality through unique F&B concepts. Founded in 2012 with the opening of Singapore’s celebrated classic cocktail bar Jigger & Pony, which is currently #2 on the Asia’s 50 Best Bars 2023 list and #14 on the World’s 50 Best Bars 2023 list, the Group now owns and operates seven exceptional restaurants and bars in Singapore. They are: Asian ingredients-focused cocktail bar Gibson (#25 on Asia’s 50 Best Bars 2020), Live Twice (a cocktail bar inspired by mid-century modern Japan), modern seafood restaurant Humpback, farm-to-table American grill Rosemead, rum-focused cocktail pub Sugarhall, and new-Italian restaurant-bar Caffe Fernet.The woman behind Jigger & Pony Group’s core philosophy of convivial hospitality, Guoyi’s background in the field started with six years spent as a flight attendant at Singapore Airlines, where she learnt what hospitality meant across different cultures.

Ines De Los Santos
A trailblazer in Latin America’s cocktail and culinary scene, Inés De Los Santos is known for crafting unforgettable experiences through mixology and food.Starting at Gran Bar Danzón at 21, she became head bartender at top Buenos Aires venues and founded Julep, one of Argentina’s leading cocktail catering services. She has published two books, spoken at TEDxSanIsidro (2006), and hosted six seasons of “El Gran Bartender.” In 2017, she launched Bardo, an itinerant cocktail and dining experience. Post-pandemic, she founded CoChinChina, a Franco-Vietnamese-inspired bar and restaurant currently ranked No. 26 on the 50 Best Bars list. In 2023, she co-founded Kōnā, a Michelin-recommended Japanese-themed venue, and in 2024, she is set to open Costa 7070, an exclusive club blending nightlife, mixology, and gastronomy.

Gina Barbachano
Gina Barbachano is general manager for Hanky Panky and Tales of the Cocktail 2023 Spirited Awards Top 4 Nominee in the International Bartender of the Year category. She studied touristic business administration in Morelia, Michoacán, where she is from. After a couple of years working as an assistant producer for the Morelia En Boca festival, she decided to go and try luck in Mexico City.There she was hired as a head bartender at a couple of spots: Domingo Santo boutique hotel in downtown and Sagardi's rooftop, a Spanish-themed restaurant in the Polanco area. Then, after a tip by fellow bartender Yivaldi Juárez, she learned that a space had just been opened at Hanky Panky. It was Ismael Martínez "Pollo" who interviewed, hired and eventually coached her for her participation in Speedrack Mexico, where she was part of the top 20 fastest bartenders. In 2019 she was chosen to represent mixology made with mezcal from Michoacán at Festival Cultural de México en Ibiza. After one year and a half behind the bar, she is now Hanky Panky's bar manager.

Gabriela Moncada
Gabriela Moncada, often referred to as Gaby, is a Mexican native from Guadalajara with extensive experience in the agave spirits industry. She serves as the Agave Ambassador for Speciality Brands, where she shares her deep knowledge and passion for agave spirits with UK bartenders and consumers through tastings, trainings, and talks. Before joining Speciality Brands, Gaby accumulated over a decade of experience working in cocktail bars across London. Her expertise encompasses a wide range of Mexican agave spirits, from the tequilas of her home state, Jalisco, to the mezcals of Oaxaca and raicillas produced using traditional Philippine stills by Maestros Taberneros in Jalisco. In addition to her ambassador role, Gaby co-founded The Bar Within Ltd, a company specializing in bar and brand consultancy. Beyond her professional endeavors, she has a passion for adventure, often riding motorbikes on country roads worldwide, and enjoys dancing salsa on London's vibrant dance floors.

Aline Vargas
Aline Vargas is the founder of Florería Atlántico, recognized as one of The World’s 50 Best Bars and celebrated as The Legend bar in 2024 for achieving an extraordinary 11th placement. Renowned for her exceptional leadership, Aline has cemented herself as a prominent figure in the global hospitality scene, known for her unparalleled expertise in bar and restaurants operations, project development, and creative collaborations. She meticulously oversees every phase of her ventures, from initial concept to final execution. Aline’s commitment to transforming the industry extends beyond her own projects. She is an active member of Women in Hospitality and the creator of Festival Atlántico, both initiatives focused on promoting education, leadership, and inclusivity within the hospitality sector.

Sarah Marsiglia
Sarah Marseglia is a dedicated advocate for the hospitality industry, with a career built on collaboration and community-building. As co-founder of Napier's award-winning Teresa Cocktail Bar, she works alongside her partner, Andrea Marseglia, crafting intimate experiences that showcase New Zealand's seasonal produce and foraged ingredients.Sarah co-founded NZ Bar Con, an annual event launched in August 2024, designed to educate, inspire, and unite hospitality professionals nationwide. This initiative reflects her passion for elevating the industry's collective future. Through her Overproof Podcast, launched in 2024, she amplifies diverse voices in the bar world, hosting honest conversations about the challenges and triumphs of hospitality life. The podcast delves into guests' journeys to success, their real-world experiences, and perspectives on the industry's current state. She also works full-time as a Customer Success Manager at Loaded, a hospitality tech platform that measures venues' biggest costs—labor and goods. In this role, she helps businesses streamline operations and use data to make smarter, more profitable decisions. Oh, and also a mother to a 2-year-old.

Eve Speciall
Eve Speciall is an Australian DJ and model renowned for her dynamic presence in sport, fashion and music industries. Beyond the DJ booth, Eve’s influence extends into fashion and luxury events, as the Music Director for Hong Kong Fashion Week for three consecutive years, she curated soundscapes that elevated avant-garde runway presentations. Her signature style and versatility have made her a sought-after DJ for some of the world’s most prestigious brands, including Dolce & Gabbana, Givenchy, Vanity Fair. Seamlessly blending her expertise in music and fashion, Eve has carved out a unique space as a multifaceted artist. Now a resident DJ here at Maybe Sammy, she brings her impeccable sound to the hospitality world. A true master of atmosphere, she sets the pulse of the night, syncing effortlessly with the rhythm of the room. Her ability to merge music, hospitality, and culture solidifies her status as a global tastemaker, bringing an unmistakable energy to every set she plays.
Scholarship
We are proud to raise funds during the Women in Hospitality Panel, in partnership with Campari Academy, to create a tangible impact in the life and career of a rising woman in hospitality. $25 tickets and part of the event’s proceeds will go towards a scholarship, offering a once-in-a-lifetime learning experience, with hands-on training at Maybe Sammy and an incredible opportunity to travel all the way to Paradiso in Barcelona, and learn from one of the most creative bars on earth.
